I added a text field (field 1) to my form with the basic settings. When I create content, if I don't put anything in Field 1, it adds an asterisk "*" when it is saved. I don't want an asterisk added to the field. When I open it again, there is an "*". In the search results, because there is an "*" in the field, it displays the field which I don't want displayed. Other text fields I created don't have this problem.

That would only happen if you have set its default value (inside field configuration) or live value to *. Only other option is that some 3rd party javascript is doing this, but this is not very likely.
